Ingredients

6 acorn squash
1 cup dry couscous
1 cup water
1 cup golden raisin
1/4 cup butter
4 chicken breasts , chopped into 1 inch pieces
1 red bell pepper , diced
1 medium onion
2 garlic cloves , crushed
2 tablespoons curry powder
1 tablespoon honey
1 cup chopped mushroom
1 cup sweet corn
1/2 cup chicken broth
1 teaspoon black pepper
1 teaspoon Hungarian paprika ( optional , to spice it up )
1 bunch scallion , chopped
Curry chicken with couscous and acorn squash is a delicious and healthy meal that is perfect for a weeknight dinner. Instructions

1.Preheat the oven to 375ºF.
2.Cut squash in half lengthwise and scoop out the seeds and pulp.
3.Melt butter in a small saucepan over high heat. Add couscous and coat well with butter.
4.Add the dried fruit, water, and 1/2 teaspoon salt and stir well.
5.Bring to a boil, reduce heat to low, cover and simmer for 8 to 10 minutes until liquid is absorbed and couscous is tender.
6.While the couscous is cooking, prepare the curry chicken. Mix the chicken and curry powder in a large bowl and set aside.
7.Heat 2 tablespoons of olive oil in a large skillet over high heat.
8.Add onion, garlic, and chopped mushroom. Stir and fry for 3-4 minutes.
9.Add chicken and bell pepper to the skillet and stir the meat until it is evenly browned.
10.Add honey, chicken broth, paprika, and black pepper. Stir everything and let the sauce thicken, allowing the chicken to cook through completely.
11.Roast the acorn squash for 45-50 minutes, until fork-tender.
12.Remove the squash from the oven and fill each squash half with the cooked couscous.
13.Pour the curry chicken on top of the couscous in each squash half.
14.Top the dish with scallions and sweet corn and serve hot.
