250 g rice noodles
450 g chicken thigh fillets , sliced thinly
1 garlic clove , crushed
1 teaspoon fresh ginger , grated
2 red Thai chile , sliced thinly
2 tablespoons palm sugar , chopped
2 tablespoons soy sauce
1/4 cup sweet chili sauce
1 tablespoon fish sauce
1 tablespoon lime juice
3 green onions , sliced thinly
1 cup bean sprouts
1 cup snow pea sprouts
1/4 cup coriander leaves , loosely packed
Phad Thai is a classic Thai noodle dish that's known and loved around the world. Instructions

1.In a large bowl, soak the rice noodles in hot water for 7-8 minutes until soft.

3.Add garlic, ginger, and chilies and cook for another 30 seconds.
4.Add palm sugar, soy sauce, sweet chili sauce, fish sauce, and lime juice to the pan, stir to combine.
5.Add the soaked noodles, green onions, bean sprouts, snow pea sprouts, and half of the coriander. Stir-fry for another minute or two, until everything is heated through and coated in the sauce.
6.Serve hot, garnished with the remaining coriander leaves.
