1/2 teaspoon ground cumin
1 1/4 cups canned unsweetened coconut milk
1 stalk lemongrass , cut into 2-inch pieces or 1 teaspoon finely shredded lemon peel
2 cups hot cooked rice
1 can sliced bamboo shoots , drained
