1 boneless pork loin roast
water as needed
1 pinch garlic salt

2 cans green enchilada sauce , divided
1/2 cup brown sugar
1 package flour tortillas
2 cans black beans , rinsed and drained
1/4 cup chopped cilantro , or to taste
1/2 cup shredded Monterey Jack cheese
These Sweet Pork Enchiladas are a delicious dinner option that combines the sweet and savory flavors of brown sugar and pork with the warmth of green enchilada sauce. Instructions

1.Preheat the oven to 375 degrees F (190 degrees C).
2.Place the pork roast in a large pot, cover with water, and season with garlic salt and black pepper.
3.Bring to a boil over high heat, then reduce heat to low, cover, and simmer until the meat is very tender, about 3 hours.
4.Drain the pork and shred with two forks.
5.In a large bowl, whisk together 1 can of enchilada sauce and brown sugar.
6.Stir in the shredded pork, black beans, and cilantro.
7.Dip each tortilla in the remaining can of enchilada sauce to coat.
8.Spoon the pork mixture down the center of each tortilla, and roll up.
9.Place the enchiladas seam-side down in a 9x13 inch baking dish.
10.Pour any remaining sauce over the top of the enchiladas, and top with shredded Monterey Jack cheese.
11.Bake in the preheated oven for 25 to 30 minutes, or until the cheese is melted and bubbly.
