Ingredients

1 1/2 tablespoons vegetable oil
1 kg chicken thigh fillet , trimmed , cut in half crossways
114 g Thai red curry paste ( see note )
1 cup continental real chicken stock
150 g fresh shiitake mushrooms , stems trimmed , halved
230 g sliced bamboo shoots , drained
1 tablespoon fish sauce
1 tablespoon brown sugar
140 ml coconut milk
1/3 cup basil leaves
steamed jasmine rice , to serve

Instructions

1.Heat 1 tablespoon of oil in a large non-stick frying pan over medium-high heat.
2.Add chicken and cook for 3-4 minutes until golden. Remove chicken from pan and set aside.
3.Heat remaining 1/2 tablespoon of oil in the same frying pan over medium-high heat.
4.Add curry paste and cook for 1-2 minutes, stirring constantly.
5.Add chicken stock, mushrooms, bamboo shoots, fish sauce, and brown sugar to the pan. Bring to a simmer.
6.Pour mixture into a slow cooker. Add reserved chicken.
7.Cook on high for 4 hours or low for 6-8 hours.
8.Stir in coconut milk and basil leaves. Serve hot with steamed jasmine rice.
