1 lime , juice of
1 tablespoon palm sugar
1 red fresh chili pepper , Deseeded and finely chopped
2 stalks lemongrass , tough outer layers removed , finely chopped
1 tablespoon vegetable oil , plus
oil , for cooking the chicken

340 g boneless skinless chicken breasts
113 g snow peas
113 g rice paper
cashew nuts , 1 handful
1/2 red capsicum , chopped
1/2 carrot , grated
1/2 head iceberg lettuce , cored and sliced into very thin strips

Instructions

1.Marinate the chicken by combining the lime juice, palm sugar, chili pepper, lemongrass, and vegetable oil in a small bowl. Add salt to taste.
2.Cut the chicken into thin strips and add it to the marinade. Massage the chicken with the mixture until it is fully coated. Let it sit for 30 minutes to an hour.
3.Heat a small amount of oil in a pan over medium-high heat. Add the chicken and fry until it is cooked through, about 3-4 minutes. Remove from heat and let it cool.
4.Blanch the snow peas in boiling water for 1-2 minutes and drain. Cut them into thin strips.
5.Soak the rice paper in warm water for 10-15 seconds until it is soft and pliable. Place it on a damp kitchen towel.
6.Place a few strips of chicken, snow peas, cashew nuts, capsicum, carrot, and lettuce on the bottom third of the rice paper.
7.Fold the bottom third of the paper over the filling and then fold over the sides of the paper. Roll it tightly to the end.
8.Serve the rolls with dipping sauce of your choice.
