Ingredients

2 whole chicken breasts , seasoned with salt and pepper

1/4 lb fresh white mushroom , chopped fine
1 bunch green onion , thinly sliced

1 large carrot , grated
1/2 inch gingerroot , grated ( Or , substitute powdered ginger )
1/2 cup chicken broth
1/4 cup soy sauce
3 tablespoons peanut butter , creamy
1/8 teaspoon red pepper flakes , OPTIONAL . More if you like it spicy
2 romaine lettuce hearts , leaves separated
These satisfying satay chicken lettuce wraps are a fresh and flavorful take on traditional lettuce wraps. Instructions

1.Heat olive oil in a large skillet over medium-high heat.
2.Add the chicken and garlic, and sauté for 5-7 minutes, or until the chicken is golden brown and cooked through.
3.Add in the mushrooms, green onions, peanuts, and grated carrot, and cook for an additional 2-3 minutes.
4.In a small bowl, whisk together the ginger, chicken broth, soy sauce, peanut butter, and red pepper flakes.
5.Pour the sauce over the chicken mixture and stir to combine.
6.Allow the mixture to cook for an additional 2-3 minutes, until all of the ingredients are fully coated in the sauce.
7.Serve the satay chicken mixture in romaine lettuce leaves and enjoy!
