Ingredients

2 quarts water , cold
1/4 cup salt
1/4 cup sugar
1 lb shrimp , shelled and deveined
1/2 cup peanut butter , smooth
1/2 cup hoisin sauce

2 tablespoons soy sauce

1 teaspoon chili-garlic sauce
1/2 teaspoon hot sauce ( I like Cholula )
2 tablespoons cornstarch , mixed with 2 T Water ( optional )
1 tablespoon canola oil
1 onion , diced
1 red pepper , diced
2 teaspoons garlic , minced
2 cups asparagus , cut into 1 inch pieces
3 cups noodles , cooked and drained

Instructions

1.In a large pot, bring the 2 quarts of water, salt, and sugar to a boil.
2.Add the shrimp, and cook for 2-3 minutes or until cooked through. Remove from water.
3.In a medium bowl, whisk together the peanut butter, hoisin sauce, water, brown sugar, sesame oil, soy sauce, lime juice, red wine vinegar, garlic salt, minced ginger, minced garlic, chili-garlic sauce, hot sauce, and cornstarch mixture (if using).
4.In a large skillet over medium heat, add canola oil. Once heated, add diced onion, diced red pepper, and minced garlic, and sauté for approximately 2-3 minutes.
5.Add asparagus to the skillet and sauté for approximately 2-3 minutes.
6.Add cooked noodles and shrimp to skillet and cook until heated through.
7.Add the peanut sauce to the skillet, and stir until well combined. Serve immediately and enjoy!
