3 pounds beef skirt steak
3 teaspoons garlic powder
3 teaspoons fajita seasoning
8 slices bacon
1 onion , chopped
1 bell pepper , chopped
1/2 bunch cilantro , chopped
1 large tomato , chopped

Instructions

1.Preheat oven to 375°F.
2.Season the beef skirt steak with the garlic powder and fajita seasoning.
3.Take a large skillet and cook the bacon over medium heat until crispy, transfer it to paper towels to drain and crumble.
4.Saute onion and bell pepper in the same skillet until the vegetables are tender.
5.For the beef, heat up the other skillet and cook the beef skirt steak for 4-6 minutes per side.
6.Chop the beef and add it to the pan with the onion and bell pepper. Saute for a couple more minutes.
7.Mix crumbled bacon, cilantro, tomatoes, and cheese in a bowl.
8.In a large baking dish lay a single layer of beef mixture, then add bacon and cheese mixture, and so on.
9.Repeat layers till the final layer is shredded cheese. Cover it with aluminum foil and bake for 10-15min.
10.Garnish with chopped cilantro and serve hot.
