3 lbs skirt steaks , cut into 5-inch lengths or 3 lbs flank steaks , left whole

Instructions

1.In a blender or food processor, combine basil, cilantro, garlic, sambal oelek or other sriracha garlic sauce, fish sauce, lemon zest, lime zest, and vegetable oil. Blend until smooth.
2.In a large bowl, add the skirt steak (or shrimp or chicken) and pour marinade on top. Mix until the meat is fully coated.
3.Cover and marinate in the fridge for at least 2 hours or overnight.
4.Preheat the grill over high heat.
5.Remove the steak from the marinade and grill to desired doneness. For skirt steak, it should take about 3-5 minutes per side, depending on the thickness.
6.Let the meat rest for 5 minutes before slicing and serving.
