Ingredients

2 teaspoons whole white peppercorns or 2 teaspoons black peppercorns
1/4 cup coarsely chopped cilantro leaf , with stems
1/4 cup coarsely chopped garlic
1 cup sugar
1/2 cup water
1/2 cup distilled white vinegar
2 tablespoons finely minced garlic
1 teaspoon salt , if desired
1 tablespoon chili-garlic sauce ( available in the Asian section of your grocery-I like Huy Phong brand , a.k.a . Rooster brand )
2 tablespoons soy sauce
1 teaspoon salt
4 lbs chicken pieces
hot cooked long-grain rice or jasmine rice

Instructions

1.Using a mortar and pestle, grind the white peppercorns (or black peppercorns) into a fine powder. Add cilantro and garlic, pound to a paste.
2.Place sugar, water, and distilled white vinegar in a saucepan and boil, stirring occasionally. Remove from heat and let cool.
3.Mix together the garlic, chili-garlic sauce, soy sauce, salt, and 1/3 cup of the cooled sugar-vinegar syrup in a bowl.
4.Marinate the cleaned chicken pieces in this mixture for at least 2 hours, preferably overnight.
5.Preheat grill to high heat and lightly oil the grate.
6.Grill the chicken on each side, basting frequently with the remaining marinade mixture, until cooked through and nicely charred.
7.Serve hot with rice and garnish with coriander leaves.
