Ingredients

3 lbs frying boneless skinless chicken , and cut into small chunks
4 cups coconut milk
2 tablespoons fish sauce
3 pieces Laos powder
3 tablespoons green curry paste ( see my recipe )
1/2 cup fresh sweet basil leaves
8 young fresh lime leaves
1/2 cup green peas
7 serrano chilies
Gaeng Keow Wan Gai, or Thai Green Curry Chicken, is a popular curry dish in Thailand that is also enjoyed by millions of people around the world. Instructions

1.In a large pot or wok, heat 1 cup of the coconut milk over medium heat until it begins to simmer.
2.Add in the green curry paste and stir until it is well combined with the coconut milk.
3.Add in the chicken, fish sauce, Laos powder, and remaining coconut milk. Stir until the chicken is well coated in the curry mixture.
4.Bring the curry to a boil and then reduce the heat to medium low. Let it simmer for 15-20 minutes until the chicken is fully cooked.
5.Add in the lime leaves, serrano chilies, and green peas. Stir until the green peas are warmed through and the curry is fragrant.
6.Remove the curry from heat and stir in the fresh sweet basil leaves.
7.Serve the curry over rice or noodles.
