16 pancakes
6 green onions , thinly sliced lengthwise
1 cup fresh coriander leaves
1 teaspoon crumbled dried tangerine peel
1 tablespoon rye meal or 1 tablespoon cognac
2 teaspoons granulated sugar
2 teaspoons red beans , curd paste
1 teaspoon soy sauce
1 teaspoon five-spice powder
1 duck
4 green onions
1/4 cup thinly sliced gingerroot
2 tablespoons chinese rice wine or 2 tablespoons sherry wine
2 tablespoons liquid honey
1 tablespoon rice vinegar
1/2 cup hoisin sauce
1 tablespoon granulated sugar
2 teaspoons sesame oil
2 cups all-purpose flour
3/4 cup boiling water
1/4 cup sesame oil
Chinese New Year Roast Duck Rolls are a traditional dish served during the annual Chinese New Year celebration. Instructions

1.Preheat oven to 375°F.
2.Rinse any ice glaze from frozen duck under cold water and pat dry. Cut off excess fat.
3.Pierce skin all over duck. Chop green onion and gingerroot in to thick pieces. Combine with rice wine, honey, vinegar, soy sauce and five spice powder in a small bowl.
4.Place duck, breast side up, on rack in roasting pan. Rub 2 teaspoons sesame oil over duck skin.
5.Roast duck in 375°F oven 2 1/2 hours, pricking skin every 20 minutes to release fat. Remove duck from oven; let stand 15 minutes.
6.Cut duck meat from bones into thin slices and arrange on a plate. To assemble duck rolls, place a pancake on a small plate. Add a 1/2 tablespoon of hoisin sauce along with red bean curd paste, 1-2 duck slices, two slices of green onion and a couple of coriander leaves.
7.Fold up pancake, first folding the bottom up to cover the filling, then folding the two sides in toward the center, and rolling up tightly.
8.Serve the duck rolls with green onions, coriander leaves, and tangerine peel.
