Lamington Bars are a classic Australian dessert that has become popular around the world. These square-shaped cakes are made with a butter sponge cake coated in a chocolate-coconut frosting and sometimes filled with jam or cream. The Lamington is believed to have been named after the Governor of Queensland, Lord Lamington. It is typically served with a cup of tea or coffee and is perfect for satisfying a sweet tooth. This recipe is an easy way to enjoy this classic treat at home and impress your friends and family with your baking skills.

Instructions

1.Preheat your oven to 350 degrees F and lightly grease a 9x13 inch baking pan.
2.In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3.In a large mixing bowl, cream together the butter, sugar, and vanilla extract until light and fluffy. Add in the eggs one at a time, mixing well after each addition.
4.Gradually blend in the flour mixture until smooth. Fold in the chopped almonds and 3 cups of the flaked coconut.
5.Spread the mixture evenly into the prepared baking pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
6.Meanwhile, in a large mixing bowl, sift together the confectioners' sugar and cocoa powder. Stir in the remaining 2 cups of coconut until well combined. Gradually mix in the vanilla extract and enough milk to create a thick, but spreadable frosting.
7.Once the bars are cool, cut them into equal-sized squares and dip them into the frosting mixture, using a fork to coat them evenly. Set them on a wire rack for the frosting to dry.
