Instructions

1.In a large bowl, marinate the chicken slices with kosher salt and grated ginger root for 30 minutes.
2.In a separate bowl, mix lemon juice, chicken broth, white wine, brown sugar, and cornstarch in cold water. Stir well to dissolve cornstarch.
3.Preheat a non-stick pan over medium-high heat and add a bit of oil.
4.Sear chicken for 2-3 mins on each side until golden brown on the surface and fully cooked.
5.Add red bell pepper and firm tofu. Stir-fry for additional 1-2 minutes.
6.Pour the lemon juice sauce all over the chicken and veggies. Mix well and bring to a simmer for 1-2 mins until the sauce thickens to desired consistency.
7.Garnish with sliced green onion. Serve hot with rice or noodles.
