Ingredients

2 tablespoons soy sauce
1 tablespoon rice vinegar
2 teaspoons sugar
1/2 teaspoon chili-garlic sauce
1/4 teaspoon white pepper
1 tablespoon vegetable oil
12 ounces extra firm tofu , cut 1/2-3/4 inches cubes
1 red bell pepper , sliced
1 tablespoon vegetable oil
1 tablespoon garlic , minced
2 teaspoons fresh ginger , minced
Szechuan Tofu and Red Bellpepper, also known as Mapo Tofu in Chinese, is a popular Szechuan dish that has spread across the world. This dish is known for its bold and spicy flavor, with a mixture of tender tofu cubes and crispy red bell pepper slices smothered in a savory sauce with kick of heat. The sauce’s heat comes from the chili-garlic sauce combined with the white pepper and is balanced with the sweetness of sugar and tanginess of rice vinegar. This dish is a perfect balance of flavors with the protein from the tofu and vitamins and minerals from the red bell pepper making it a healthy meal option for vegetarians.

Instructions

1.In a small bowl, whisk together the soy sauce, rice vinegar, sugar, chili-garlic sauce, and white pepper until the sugar is dissolved.
2.In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat. Add the tofu cubes and stir-fry for 2-3 minutes, until lightly browned on all sides. Remove from the skillet and set aside.
3.Add the red bell pepper to the skillet and stir-fry for 2-3 minutes, until slightly softened and lightly charred in spots. Remove from the skillet and set aside.
4.Add another tablespoon of vegetable oil to the skillet if needed, then add the garlic and ginger. Stir-fry for 30 seconds to 1 minute, until fragrant.
5.Return the tofu and red bell pepper to the skillet, along with the soy sauce mixture. Stir-fry for another 2-3 minutes, until the sauce has thickened and coated the tofu and pepper. Serve hot with steamed white rice.
