Ingredients

1 lb chicken breast , 1/2-inch cubes ( substitute shrimp or beef , thinly sliced )
1 small egg , beaten
1/4 cup water
1/4 cup cornstarch
1/2 teaspoon salt
2 green onions ( white part sliced and greens cut into 1/2-inch pieces )
1 red pepper , chunked
1 green pepper , chunked
1 small zucchini , chunked
1/3 cup water
2 1/2 tablespoons soy sauce
1 tablespoon cornstarch ( dissolved in 1 Tbsp cold water )
1 teaspoon rice wine vinegar
2 tablespoons vegetable oil , divided
1 teaspoon garlic , minced
1/4 teaspoon ground ginger
1/4 teaspoon red pepper flakes
granulated sugar , sprinkled in ( to your taste )
1/3 cup peanuts , dry-roasted
4 cups cooked white rice ( Botan , sticky rice )

Instructions

1.In a bowl, mix together egg, water, cornstarch and salt and mix until combined.
2.Add chicken, shrimp or beef and toss to coat; let it sit for 10 minutes.
3.In a separate small bowl, mix together soy sauce, cornstarch mixture, rice wine vinegar and water until blended and set aside.
4.In a wok or large pan over high heat, heat up 1 tablespoon of oil and add chicken, shrimp or beef and stir-fry for 2 to 3 minutes.
5.Remove protein from the wok or pan and place them onto a plate and set aside.
6.In the same wok or pan, heat the remaining tablespoon of oil and add white part of the green onions, garlic, ginger and red pepper flakes; stir-fry until aromatic.
7.Add the red pepper, green pepper and zucchini, stir-fry for 2 to 3 minutes.
8.Add in the soy sauce mixture and peanuts and bring to a boil for 1 minute.
9.Add the chicken, shrimp or beef back into the wok or pan and stir well.
10.Cook until the protein is heated through and everything is coated evenly with sauce.
11.Add sugar to taste.
12.Garnish with the green parts of the green onions.
13.Serve over rice and enjoy!
