2 scallions , white part minced , green parts sliced thin
2 tablespoons asian garlic and red chile paste
4 tablespoons vegetable oil
6 ounces shiitake mushrooms or 6 ounces portabella mushrooms , stemmed and sliced thing
2 cans water chestnuts

Instructions

1.In a small bowl, whisk together chicken broth, sugar, soy sauce, black vinegar, sesame oil, rice wine, ketchup, fish sauce, and cornstarch.
2.In a medium bowl, toss pork with baking soda and cold water, then rinse well and drain. In another small bowl, whisk together rice wine and cornstarch.

4.In the same skillet, add garlic, scallion whites, and chile paste and cook, stirring constantly, until fragrant, about 15 seconds. Add mushrooms and water chestnuts and cook, stirring occasionally, until vegetables are crisp-tender, about 2 minutes.
5.Whisk sauce mixture and add to skillet. Cook, stirring constantly, until sauce is thickened and glossy, about 45 seconds. Return pork and any accumulated juice to skillet and toss to combine.
6.Transfer to a serving platter, sprinkle with scallion greens, and serve over rice.
