Ingredients

1 lb firm tofu
4 ounces ground pork
1/4 teaspoon salt
1 tablespoon chili paste ( or more , depending on your preference )
3 tablespoons chicken broth or 3 tablespoons chicken stock
1 leeks or 3 green onions
1 teaspoon black bean paste
1 1/2 tablespoons tapioca starch
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons water
2 tablespoons soy sauce
Mapo Tofu is a popular Szechuan dish made with tofu and ground pork in a spicy sauce. It's a comfort food that's perfect for cold days or when you're looking for something warm and filling. Instructions

1.Cut the tofu into 1/2 inch cubes.
2.Heat a large nonstick skillet over medium-high heat. Add the pork and cook until browned.
3.Add the salt, chili paste, chicken broth, diced leeks or green onions, and black bean paste to the skillet and stir well.
4.Bring the mixture to a simmer and cook for 2-3 minutes.
5.Reduce the heat to low and add the tofu cubes to the skillet.
6.In a small bowl, whisk together the tapioca starch, 2 tablespoons of soy sauce, and 2 tablespoons of water.
7.Add the cornstarch mixture to the skillet and stir until the sauce thickens.
8.Garnish with chopped green onions and serve over rice.
