Chinese Spring Rolls, also known as Shanghai Rolls, are a popular dim sum dish that has been enjoyed in China for centuries. They are usually served as an appetizer or snack and are made from thin wrappers filled with a mixture of vegetables, meat, or seafood. In this recipe, we use a filling of celery, mung bean sprouts, bamboo shoot, water chestnut, and crabmeat to create a savory and satisfying roll. These rolls are typically served with Chinese mustard, chili oil, and soy sauce for dipping. While they are traditionally deep-fried, they can also be baked or pan-fried for a healthier option.

Instructions

.In a large bowl, mix flour and salt. In a separate bowl, whisk eggs and 1 cup of water.
.Gradually add egg mixture into flour and mix well until a smooth batter is formed.
.Slowly add more water, 1 tablespoon at a time, until batter reaches a thin consistency.
.Heat 1 tablespoon of peanut oil in a wok over high heat. Add celery and stir fry for 30 seconds.
.Add mung bean sprouts, bamboo shoot, water chestnut, soy sauce and sugar. Stir fry for 2 minutes until vegetables soften.
.Add crabmeat, sesame oil and green onions. Stir fry for 1 minute. Remove from heat and set aside to cool.
.In a separate bowl, mix cornstarch and 3 tablespoons of water to form a paste.
.Lay out one skin and brush edges with cornstarch paste.
.Place 2 tablespoons of filling diagonally across skin and fold one corner over the filling, tucking in the side corners.
.Roll tightly and seal the edges. Repeat for remaining skins and filling.
.Heat enough peanut oil in a wok over medium-high heat to deep-fry rolls. Dip rolls into beaten egg mixture and deep-fry until golden brown on both sides.
.Drain on paper towels and serve with Chinese mustard, chili oil and soy sauce.
