Ingredients

8 lbs beef shanks , cut crosswise into 2 inch thick bone-in pieces
1/4 cup chinese rice wine
3 tablespoons whole black peppercorns
14 garlic cloves , crushed
8 plum tomatoes , quartered
8 whole star anise pods
4 yellow onions , quartered
2 dried arbol chiles
1 piece ginger , chopped
3 tablespoons chinese black vinegar
dark soy sauce , to taste
kosher salt , to taste
sugar , to taste
12 baby bok choy
1 1/2 lbs thin egg noodles
pickled chinese greens , chopped ( garnish )
Hong Shao Niu Rou Mian, or Taiwanese Beef Noodle Soup, is a beloved dish in Taiwan and beyond. This rich, flavorful soup features tender beef shanks cooked in a fragrant broth made from a blend of spices and aromatics. The addition of baby bok choy adds a nutritious touch to this comforting classic. Instructions

1.Boil a pot of water and add in the beef shanks and rice wine. Cook for 5 minutes.
2.Remove the beef shanks from the pot and rinse them under cold water. Discard the water.
3.In the same pot, add the beef shanks, black peppercorns, garlic, tomatoes, star anise pods, onions, arbol chiles, ginger, black vinegar, dark soy sauce, kosher salt, and sugar. Fill with enough water to cover the beef.
4.Bring the soup to a boil, then reduce the heat and let it simmer for at least 3 hours or until the beef is tender.
5.While the soup is simmering, cook the egg noodles according to package instructions and set them aside.
6.In a separate pot, blanch the baby bok choy in boiling water for 1-2 minutes.
7.To serve, place a serving of noodles in a bowl, top with the beef and broth and a few baby bok choy leaves. Garnish with chopped pickled Chinese greens.
