Ingredients

400 ml cooked long-grain rice ( enough to fill a measuring jug up to 400ml level )
2 large eggs
2 tablespoons sesame oil
2 tablespoons ground nut oil
1 teaspoon salt
1/2 teaspoon black pepper
50 g bean sprouts
50 g water chestnuts
2 tablespoons chopped spring onions
50 g frozen peas ( thawed and drained )
50 g chopped ham
2 tablespoons soy sauce
Easy Peasy Ham and Egg Fried Rice is a quick and easy meal that is perfect for busy weeknights or when you’re short on time. The dish combines tender, fluffy rice with scrambled eggs and smoky ham, making for a deliciously filling and satisfying meal. Instructions

1.Whisk the eggs together in a small bowl, add a pinch of salt and pepper to taste.
2.Heat 1 tablespoon of groundnut oil in a wok or large frying pan over a medium-high heat.
3.Add the whisked eggs and stir fry until set. Remove from wok and set aside.
4.In the same wok, heat 1 tablespoon of sesame oil and 1 tablespoon of groundnut oil over medium-high heat.
5.Add the chopped ham and stir fry for 1 minute.
6.Add the cooked rice, soy sauce, salt, and black pepper to the wok and stir fry until heated through.
7.Add the frozen peas, water chestnuts, and bean sprouts, stirring them into the rice.
8.Add the cooked eggs and chopped spring onions to the wok and stir fry until evenly distributed and heated through.
9.Serve hot and enjoy!
