125 g ground pork or 125 g beef
1/2 teaspoon light soy sauce
1/2 teaspoon shaoxing rice wine

125 g bean thread noodles

2 spring onions , finely chopped ( scallions )
1 tablespoon finely chopped ginger
1 garlic clove , finely chopped
1 teaspoon chili bean paste ( toban jiang )
2 spring onions , extra green part only , finely chopped ( for garnish )
1 tablespoon light soy sauce
1 tablespoon shaoxing rice wine
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon toasted sesame oil
250 ml chicken stock

Instructions

1.In a bowl, mix ground meat with 1/2 teaspoon light soy sauce, 1/2 teaspoon shaoxing rice wine, and 1/2 teaspoon toasted sesame oil.
2.Soak the bean thread noodles in cold water for 10 minutes, then drain and set aside.
3.Heat oil in a wok or large skillet over medium-high heat. Stir-fry the spring onions, ginger, and garlic for about 30 seconds, then add the chili bean paste and stir for another 30 seconds.
4.Add the meat mixture and stir-fry for about 2-3 minutes until browned.
5.Add the bean thread noodles, 1 tablespoon light soy sauce, 1 tablespoon shaoxing rice wine, salt, sugar, and sesame oil, stirring constantly for 3-5 minutes until the noodles are cooked and the sauce is well mixed.
6.Pour in the chicken stock, cover, and simmer for about 5 minutes.
7.Garnish with extra finely chopped green onions if desired.
