8 ounces bean sprouts

4 cups celery ( finely diced )
3 large mushrooms ( diced )
1 tablespoon soy sauce
1 tablespoon mirin rice wine
2 teaspoons salt
1/2 teaspoon sugar
1 teaspoon cornstarch
2 tablespoons water
3 tablespoons vegetable oil
1 egg ( beaten )

Instructions

1.Soak the bean sprouts in cold water for 15 minutes, then drain and cut into 1-inch pieces.
2.Shell and devein the shrimp and finely chop the pork.
3.In a mixing bowl, combine the shrimp and pork with celery, mushrooms, soy sauce, mirin rice wine, salt and sugar.
4.In a small bowl, mix the cornstarch and water until smooth.
5.Heat the vegetable oil in a wok over high heat. Add the filling and stir-fry until the meat is browned and cooked.
6.Add the soaked bean sprouts and the cornstarch mixture and stir-fry for another 1-2 minutes until everything is well combined and evenly coated in sauce.
7.Turn off the heat and let the filling cool down to room temperature.
8.Wrap the egg rolls: brush the edges of an egg roll wrapper with the beaten egg, then place 2 tablespoons filling on the wrapper and roll up tightly, tucking the sides in after the first fold. Repeat until all the filling is used up.
9.Deep-fry the egg rolls in the oil till crispy and golden brown.
10.Drain the egg rolls on a paper towel and serve hot with sweet and sour sauce or hot mustard.
