Ingredients

8 ounces fresh needle noodles
8 large shrimp , precooked
3 ounces char sui pork , precooked
1/2 onion , sliced
1/2 inch ginger , peeled and grated
1 garlic clove , chopped
1/2 green pepper , sliced into chunks
2 scallions , sliced
2 eggs
4 ounces bean sprouts
2 tablespoons soy sauce
1/3 teaspoon salt
3/4 teaspoon sugar
2 teaspoons sesame oil
3 tablespoons chicken stock or 3 tablespoons water
1/2 tablespoon oyster sauce
1 -2 tablespoon vegetable oil , for stir frying ( or peanut oil )
Needle noodles, also known as ‘jian jiao’ in China, are a type of Chinese noodle made from wheat flour and water. They are long, thin and often used in stir fry dishes like this one. Needle noodles are a great option for those wanting to consume less refined carbohydrates and more protein. In this recipe, we’ve added char sui pork and shrimp, two great sources of protein, some fresh veggies and topped it all off with a delicious soy sauce dressing. This bold noodle dish is perfect for any meal and can be eaten in any season. Add some sriracha for some extra heat!

Instructions

1.Beat the eggs in a bowl and set aside.
2.Boil a pot of water and cook the needle noodles for 1-2 minutes until soft.
3.Rinse the noodles under cold water and set aside.
4.Heat vegetable oil or peanut oil in a wok.
5.Stir fry onions until translucent.
6.Add ginger, garlic, green pepper and scallions and stir fry for another minute.
7.Add bean sprouts and stir fry for an additional 30 seconds.
8.Add char sui pork, shrimp, and the cooked noodles and mix well.
9.Add soy sauce, salt, oyster sauce, sugar, and sesame oil to the wok and stir fry for 2 minutes until well combined.
10.Add chicken stock or water and mix well.

PROS

This noodle recipe packs a lot of protein and flavor, with the shrimp and pork adding variety to the dish.

It’s a one-wok meal so the preparation and cleaning up afterwards is minimal.

CONS
