Ingredients

1 lb ground pork
1 tablespoon vegetable oil
1 ounce gingerroot , sliced into 1/4 inch pieces
1 -2 garlic clove , minced
4 -6 green onions , green and white part , sliced into 1-inch pieces
14 ounces firm tofu , drained and cut into large1-inch cubes
1 cup chicken broth , seperated
1 tablespoon cornstarch , more if desired
1 tablespoon sugar
3 tablespoons shao xing cooking wine
3 tablespoons chinese rice wine
1 teaspoon sesame oil
1 tablespoon dark soy sauce
2 teaspoons garlic and red chile paste ( to taste )

Instructions

1.In a large skillet or wok, heat the vegetable oil over medium-high heat.
2.Add the ground pork and cook for 5-7 minutes, breaking it up into small pieces with a spatula.
3.Add the ginger, garlic, and green onions and cook for another 2-3 minutes.
4.Add the tofu and half of the chicken broth and reduce the heat to medium.
5.In a small bowl, whisk together the remaining chicken broth, cornstarch, sugar, shao xing cooking wine, chinese rice wine, sesame oil, dark soy sauce, and garlic and red chile paste.
6.Add the sauce to the skillet and stir to combine.
7.Simmer for 5-10 minutes, until the sauce has thickened and the tofu is heated through.
8.Serve hot over rice.
