Ingredients

1/2 lb chicken breast , cubed into 1/2 inch pieces
1/2 1/2 lb italian broccoli or 1/2 lb bok choy
1 sweet onion , diced small
3 garlic cloves , minced
1 tablespoon dark soy sauce
1/2 teaspoon salt ( or to taste )
3 tablespoons peanut oil or 3 tablespoons vegetable oil
2 tablespoons red miso
1/2 cup water
1 tablespoon cornstarch
2 green onions
3 tablespoons parsley

Instructions

1.In a small bowl, mix red miso with 1/2 cup of water until smooth. Set aside.

3.Add the chicken pieces and stir-fry for 2-3 minutes or until browned. Remove chicken from skillet and set aside.
4.Add the diced sweet onion and minced garlic in the skillet and stir-fry until fragrant and softened.
5.Add the Italian broccoli or Bok Choy and stir-fry for 1-2 minutes until bright green.
6.Add the browned chicken back into the skillet and stir-fry with broccoli and onion mixture.
7.Add 1 tablespoon of dark soy sauce and 1/2 teaspoon of salt (or to taste) to the skillet.
8.Pour in the miso mixture and stir everything together to coat evenly.
9.Bring to a boil and allow to cook for 1-2 minutes until the sauce has thickened.
10.Garnish with chopped green onions and parsley. Serve over steamed rice.
