The term 'lion's head' refers to the large size of the meatballs, which are often shaped like a lion's mane. This version of the recipe comes from actor and comedian Danny Kaye's personal recipe collection, and features a flavorful mix of ground pork, water chestnuts, and spices, deep-fried until golden brown and crispy on the outside.
