Ingredients

150 g basmati rice
1 clove garlic , minced
1 bunch spring onion
3 eggs
1 tablespoon chopped coriander
9 tablespoons vegetable oil
Tabasco sauce , to taste
200 g extra-large tiger shrimp
1 tablespoon soy sauce , and extra for seasoning
1 tablespoon dry sherry
2 teaspoons cornstarch
100 g fresh breadcrumbs
100 g frozen peas
This dish is inspired by Chinese cuisine and is a popular seafood dish in many restaurants. The combination of sizzling chili prawns and egg-fried rice makes for a perfect, quick and easy meal that can be enjoyed at home. The flavors of the shrimp mixed with the spices and aromatics create a delicious and flavorful dish perfect for any seafood lover.

Instructions

1.Rinse rice with water, then add to a pot with 300ml water and a pinch of salt. Bring to a boil, reduce heat, and cook covered for 12-15 minutes. Remove from heat, leave cover on, and set aside.
2.Chop the garlic, spring onion, and coriander. Beat the eggs lightly and set aside.
3.In a wok, heat 3 tablespoons of vegetable oil on high. Add the garlic and spring onion, and stir-fry for 1 minute.
4.Add the tiger shrimp and stir-fry for 2-3 minutes until they turn pink. Add soy sauce, Tabasco sauce, and sherry, then stir-fry for another minute.
5.In a separate pan, heat 4 tablespoons of vegetable oil on high. Add the rice and stir-fry for 2-3 minutes. Add the beaten eggs and continue to stir-fry until the eggs are cooked.
6.In a shallow bowl, mix the cornstarch with 2 tablespoons water. Spread the breadcrumbs on a plate. Dip the shrimp in the cornstarch mixture, then coat in breadcrumbs.
7.Heat the remaining 2 tablespoons of vegetable oil in a pan on medium. Fry the shrimp for 1-2 minutes on each side until golden and crispy. Serve with the egg-fried rice and garnish with chopped coriander.
