2 carrots , cut into 1-inch pieces
1 red bell pepper , seeded , stems removed , diced
1/4 lb fresh sugar snap pea , strings on , edges removed ( about 20 )
2 teaspoons peeled ginger , grated
1 large garlic clove , minced
3/4 lb medium shrimp , peeled and deveined
3 cups hot cooked brown rice

Instructions

1.In a small bowl, mix together cornstarch, curry powder and sugar.
2.In another small bowl, whisk together soy sauce, rice wine vinegar and chicken broth.

4.Add in carrots and stir-fry for 2 minutes, or until slightly softened.
5.Add in the red bell pepper and snap peas, and stir-fry for 2 more minutes.
6.Remove the vegetables from the skillet and set aside.
7.Add the remaining oil to the skillet and stir in ginger and garlic.
8.Stir-fry for 30 seconds, or until fragrant.
9.Add in the shrimp and stir-fry for 2-3 minutes, or until they turn pink.
10.Add in the vegetables and broth mixture.
11.Bring to a boil and reduce heat to low.
12.Cook for 2-3 minutes, or until the sauce thickens.
13.Serve the shrimp curry over hot rice.
