Ingredients

1 tablespoon peanut oil
2 teaspoons sesame oil
2 teaspoons minced fresh ginger
2 garlic cloves , minced
1 pinch red pepper flakes
1 lb fresh spinach , cleaned , stemmed and patted dry
1 tablespoon dry sherry
1 teaspoon soy sauce ( to taste )
2 tablespoons vegetable oil
4 large eggs
salt
fresh ground black pepper

Instructions

1.Heat up a pan on medium-high heat and add peanut oil and sesame oil. Once heated, add minced ginger, garlic, and red pepper flakes.

3.Add dry sherry, soy sauce, salt and pepper to taste and stir together.
4.In a separate non-stick frying pan, heat up the vegetable oil on medium-high heat.
5.Crack the eggs into the pan and fry until the whites have set but the yolks are still runny (or to your preference).
6.Serve the eggs on top of the spinach.
