Shrimp toast is a popular appetizer in Chinese cuisine, and it's typically made by deep-frying bread with a shrimp paste filling. This recipe uses a bread machine to make the dough, which makes it easier and more delicious. The shrimp filling is creamy and savory, and it's seasoned with fresh ginger and scallions to give it a unique flavor. Sesame oil adds a nutty aroma to this dish and gives it a crispy texture when the toast is baked in the oven. It's a perfect recipe for those who love seafood and want to try a new appetizer at home.

Instructions

.In a pan, heat 1/2 tablespoon of the vegetable oil over medium heat. Sauté the chopped scallions and minced ginger until fragrant.
.Add the fresh shrimp and cook until pink, about 2-3 minutes. Remove from heat and allow to cool.
.In a bread machine, add the bread flour, sugar, salt, active dry yeast, 1 cup of water, and 1 tablespoon of vegetable oil. Select the dough cycle and allow the machine to knead the dough until smooth and elastic.
.Remove the dough from the bread machine and allow to rise for 30 minutes in a warm place.
.Preheat oven to 375°F.
.On a well-floured surface, roll the dough into a rectangular shape. Spread the sesame oil over the dough.
.Add the cooked shrimp mixture on top of the dough, leaving a 1-inch border around the edges.
.Fold the edges of the dough and seal shut. Cut the dough into 2-inch pieces and brush with 2 tablespoons of water.
.Bake for 20-25 minutes until golden brown. Serve hot.
