Ingredients

3/4 lb pork tenderloin ( all fat and connective tissue removed )
1 tablespoon mirin ( rice wine )
2 slices ginger
1 clove garlic , paper removed , flattened but still in one piece
1 leek
1 red bell pepper
2 tablespoons peanut oil
1 tablespoon sambal oelek or 1 tablespoon chili paste , of your choice
2 tablespoons soybean paste
1 tablespoon dark soy sauce
Twice-cooked Pork (Hui Guo Rou) is a traditional Sichuan dish that has become a favorite across China and beyond. As the name suggests, the dish is twice cooked - first by steaming the pork and then stir-frying it with vegetables and spices. The result is a deliciously flavored dish with a satisfying mix of spicy, sweet, and savory notes. In Sichuan, the dish is often served as part of a larger meal with other classic dishes such as Mapo Tofu and Kung Pao Chicken. However, it can also be enjoyed on its own with a bowl of steaming hot rice.

Instructions

1.Cut the pork into thin 1 inch strips and marinate with mirin, ginger and garlic for 10 mins.
2.Slice leeks diagonally and the red bell pepper into thin strips.
3.Heat peanut oil in a wok over medium-high heat.
4.Add marinated pork strips and stir-fry until the pork is cooked through and slightly browned.
5.Remove the pork and set it aside.
6.Add chili paste, soybean paste and dark soy sauce into the same wok and stir-fry until fragrant.
7.Add the leeks and red bell pepper to the wok and stir-fry until slightly softened.
8.Add the pork back to the wok and stir-fry until everything is evenly coated in sauce.
9.Serve with steamed rice.
