Instructions

1.Preheat oven to 375 degrees F (190 degrees C). Season chicken breasts with salt and pepper and roast until an internal temperature of 165 degrees F (74 degrees C) is reached. Set aside and let cool.
2.While chicken is roasting, whisk peanut butter, soy sauce, brown sugar, lemon juice, rice wine vinegar, minced ginger, garlic cloves, minced shallot, sambal chili paste, sesame oil, peanut oil, salt, and pepper in a medium-sized bowl to create the sesame peanut vinaigrette.
3.Once chicken is cooled, remove the skin and shred into bite-sized pieces. Set aside.
4.In a large bowl, combine napa cabbage, sesame seeds, and chopped peanuts.
5.Pour the sesame peanut vinaigrette over the cabbage mixture and toss to coat.
6.Add the chicken and toss to combine.
