Ingredients

2 3/4 cups water
1 1/2 cups white rice ( I used Uncle Ben 's )
3 tablespoons vegetable oil or 3 tablespoons wok oil , 3 turns of the pan
2 eggs , beaten
2 cloves garlic , chopped
2 inches fresh ginger , minced or grated
1/2 cup shredded carrot
1 small red bell peppers or 1 small green bell pepper , diced
4 scallions , thinly sliced on an angle
1/2 cup frozen peas
1/3 cup tamari ( dark aged soy sauce )

Instructions

1.In a saucepot with a tight-fitting lid, bring the water to a boil. Add the rice, stir, and cover. Reduce the heat to low and cook for 18 minutes.
2.Preheat a non-stick skillet or wok to high heat.
3.Add oil to the pan and swirl to coat the bottom.
4.Add the eggs and scramble in the oil. Remove from the pan and set aside.
5.Add garlic and ginger to pan; stir fry for 30 seconds.
6.Add carrots, peppers, and scallions; stir fry for 2-3 minutes or until vegetables are crisp tender. Mix in cooked rice and peas.
7.Drizzle tamari (dark aged soy sauce) over top of fried rice and mix to combine. Serve hot.
