Ingredients

1 cup white rice or 1 cup brown rice
1 -2 garlic clove ( minced )
1 tablespoon vegetable oil or 1 tablespoon olive oil
6 ounces tomato sauce ( the small can )
1/4 - 1/2 white onion ( regular size- sliced or chopped )
1 tablespoon chicken bouillon ( or 1 cube )
1 tablespoon cumin powder
1 teaspoon ground pepper
2 tablespoons fresh cilantro
1/2 cup peas
1/2 cup carrot
1 tablespoon lemon pepper
1/4 cup bell pepper
Mom’s Mexican Rice is a family favorite and a classic Mexican dish. The dish is savored all around the world as well. This rice dish is a perfect blend of yellow rice, vegetables, and spices. It is a healthy, tasty, and one-pot meal recipe that requires minimal prep work. The dish is loaded with protein from chicken bouillon and vegetables, making it a complete meal. Instructions

1.Rinse the rice well and drain it.
2.Add oil to a big pot or Dutch oven and sauté the onion and garlic on medium heat till soft for about 2 to 3 minutes.
3.Add the rice and sauté for about 5 minutes or until the rice is browned.
4.Add tomato sauce, chicken bouillon, cumin powder, ground pepper, lemon pepper, and half cup water to the pot. Stir to combine everything.
5.Add chopped vegetables and stir. Cover the pot with lid and reduce the heat to medium-low.
6.Cook until the rice is tender and fluffy, and all the liquid is absorbed; about 20-30 minutes.
7.Add more salt (if needed), fresh cilantro and lime.
