1 lb chicken breast , cut into tenders
1 cup jasmine rice
1/2 cup jullianned carrot
6 minced garlic cloves
3 tablespoons pimientos
4 tablespoons sliced black olives
1 cup chicken stock
1 tablespoon cornstarch
4 tablespoons fresh orange juice
1 tablespoon orange zest
1 tablespoon basil , finely chopped
1 teaspoon kosher salt
1 teaspoon sugar
1/2 teaspoon white pepper
1/2 teaspoon cardamom
1/2 teaspoon ground ginger
1/8 teaspoon saffron
2 1/8 cups water
3 tablespoons coconut oil

Instructions

1.Rinse the jasmine rice in a fine mesh sieve until the water runs clear. Then, add the rice to a medium saucepan with the water, saffron and 1 tablespoon of coconut oil. Cover the pan and bring it to a boil. Once boiling, reduce the heat to low and simmer for 15-18 minutes or until the rice is cooked.
2.In a large skillet, heat 2 tablespoons of coconut oil and fry the chicken tenders until cooked through.
3.In another skillet, heat 1 tablespoon of coconut oil and sauté the garlic and carrots until the carrots are slightly softened.
4.Add the pimientos, olives, chicken stock, cornstarch, orange juice, orange zest, basil, salt, sugar, white pepper, cardamom, and ginger. Stir to combine and bring to a simmer. Simmer 3-4 minutes or until the sauce thickens.
5.Serve chicken tenders over the saffron rice with sauce.
