Ingredients

1 3/4 cups water
1 teaspoon low-sodium instant chicken bouillon granules ( or 1 bouillon cube )
1 cup basmati rice
1/2 cup chopped onion
1/2 cup chopped celery
8 ounces button mushrooms , sliced
2 garlic cloves , minced ( or more or less , to suit )
1 tablespoon olive oil
2 tablespoons snipped fresh herbs ( basil is my favorite )
1 teaspoon snipped fresh rosemary
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Instructions

1.In a saucepan, bring water and bouillon to a boil. Add rice. Reduce heat; cover and simmer for 18-22 minutes or until tender and water is absorbed.
2.In a skillet, sauté onion, celery, mushrooms and garlic in oil until tender. Add herbs, salt and pepper; sauté for 2 minutes.
3.Stir into cooked rice.
