Ingredients

1 cup long-grain white rice
1 tablespoon olive oil
2 garlic cloves , minced
1/2 small onion , diced
1 can whole tomatoes
1 can chicken broth
3 sprigs cilantro
1/4 cup frozen peas ( optional )

Instructions

1.Wash the rice several times with cold water and then drain it.
2.Heat the olive oil in a pot over medium heat.
3.Add garlic and onion, cook until soft.
4.Empty the can of tomatoes into the pot and break up the tomatoes with a wooden spoon.
5.Add chicken broth and cilantro, stir until combined.
6.Gently stir in the rice and bring to a boil.
7.Reduce heat to low and let it simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
8.Optional: Add frozen peas 5 minutes before the end of cooking time.
