Ingredients

2 -3 tablespoons lard or 2 -3 tablespoons cooking oil
1 cup uncooked white rice
3 garlic cloves , peeled and chopped
1/4 - 1/2 of a large onion , peeled and chopped
1/2 tomatoes , chopped ( optional )
1 teaspoon taco seasoning ( to taste )
1 pinch cayenne ( to taste )
1 can chicken broth
1 can tomato sauce
1/2 cup water

Instructions

1.Rinse the rice and drain it well.
2.In a large, deep skillet, heat the lard or cooking oil over medium-high heat.
3.Add the rice and stir it well to coat it with the oil.
4.Saute the rice for about 5-6 minutes, stirring frequently, until it begins to turn golden brown.
5.Add the garlic, onion, and chopped tomato (if using) to the skillet and saute for another 2-3 minutes.
6.Stir in the taco seasoning, cayenne pepper, chicken broth, tomato sauce, and water.
7.Bring the mixture to a boil, then reduce the heat to low, cover the skillet, and simmer for about 20-25 minutes, or until the rice is tender and has absorbed all of the liquid.
8.Fluff the rice with a fork and serve.
