Ingredients

6 cups water
2 cups long grain white rice
1 large lemon , cut into 6 - 2 x 1/2 inch strips lemon peel ( yellow part only )
1/2 teaspoon salt
5 cups whole milk
1 cup sweetened condensed milk
1 cup evaporated milk
2 cinnamon sticks
2 vanilla beans , split lengthwise in half
3/4 cup raisins
2 tablespoons sugar
ground cinnamon
2 tablespoons lemon zest
additional cinnamon stick ( optional )

Instructions

1.In a large pot, bring water to a boil and add rice, lemon peel, and salt.
2.Reduce heat and simmer for 18-20 minutes until the rice is tender and has absorbed the water.
3.Add in whole milk, sweetened condensed milk, evaporated milk, cinnamon sticks, vanilla beans, raisins, and sugar. Stir well.
4.Cook over low heat for 1 hour, stirring occasionally and scraping the bottom to prevent burning.
5.Remove from heat and let the pudding cool slightly.
6.Remove the cinnamon sticks and vanilla beans and stir in lemon zest.
7.Serve warm or chilled, garnished with a sprinkle of ground cinnamon and an additional cinnamon stick (optional).
