1 liter chicken stock ( salt reduced )
1 1/4 cups long grain rice
1 tablespoon oil
500 g chicken breast fillets ( cut into thin strips )
200 g button mushrooms ( sliced )
1 onion ( medium , sliced )
1 teaspoon thyme ( dried )
1 tablespoon cornflour ( cornstarch )
200 g green beans ( halved )
1/3 cup sour cream

Instructions

1.In a medium saucepan, bring chicken stock to a boil. Add rice, reduce heat to low, cover and simmer for 18 to 20 minutes or until tender.

3.In the same pan, add mushrooms, onion and thyme and cook until tender. Mix cornflour with 1/4 cup (60ml) water, then add it to the pan.
4.Return chicken to the pan, add green beans and cook for 2 to 3 minutes or until heated through. Stir in sour cream.
5.Serve chicken and mushroom mixture over cooked rice.
