Ingredients

2 2 lbs chicken or 2 lbs beef
1 large eggplant , peeled and chopped
1 onion , chopped
2 bell peppers , chopped
4 large garlic cloves , minced
1/2 cup green onion , chopped
2 cups chicken broth ( or 1 can plus a little water )
1 teaspoon cayenne pepper , adjust to taste
1 tablespoon season salt , to taste ( I use Tony Cachere 's which is spicier but you can use Season All which has no heat or cayenne )
3 cups brown rice , cooked ( measured after it 's cooked ) or 3 cups white rice , if preferred
Eggplant Rice Dressing- Cajun is a classic Southern dish that is often served as a side dish or a main course. Instructions

1.Preheat oven to 350°F (175°C).
2.In a large skillet over medium-high heat, brown the chicken or beef until cooked through. Set aside.
3.In the same skillet, cook the eggplant until softened, then add in the onions, bell peppers, garlic, and green onions. Cook until vegetables are tender.
4.Pour in chicken broth and stir in cayenne pepper and season salt. Let simmer for 5 minutes.
5.Add in the cooked rice and chicken or beef to the skillet. Mix everything together.
6.Transfer everything to a greased baking dish.
7.Bake for about 20 minutes. Let cool and serve.
