Ingredients

1 cup chopped onion
2 cups long-grain rice
1/4 teaspoon saffron thread , crushed
5 cups chicken stock or 5 cups canned broth
salt & freshly ground black pepper
1/3 cup snipped fresh chives

Instructions

1.In a large saucepan, melt the butter with the olive oil over medium heat.
2.Add the chopped onion and cook until tender, stirring occasionally.
3.Add the rice and saffron and stir to combine.
4.Pour in the chicken stock or broth and season with salt and freshly ground black pepper.
5.Bring to a boil, then reduce the heat to low and cover the pan.
6.Cook for 18–20 minutes, or until the rice is tender and the liquid has been absorbed.
7.Remove from heat and let the rice sit for 5 minutes.
8.Fluff the rice with a fork, stir in the snipped fresh chives, and serve.
