Ingredients

1 medium onion ( finely chopped )
1 tablespoon olive oil
1 garlic clove ( finely chopped )
1 small carrot ( diced )
2 cups raw rice
2 tablespoons dried ancho chile powder
2 teaspoons cumin
1/2 cup tomatoes ( chopped )
3 1/2 cups broth
1/4 cup peas
1/4 cup corn
2 tablespoons green peppers ( diced )
1 pinch oregano

Instructions

1.In a pot, heat olive oil over medium heat. Add chopped onion and garlic and cook until onion is translucent, about 5 minutes.

3.Add chopped tomatoes and stir well. Cook for 3 minutes until the tomatoes are soft.

5.Add 3 1/2 cups of broth and bring the mixture to a boil. Once boiling, reduce heat to low and cover. Cook for 15-20 minutes, stirring occasionally.
6.Once rice is cooked, add peas, corn, and diced green peppers, and stir well. Cook for another 2-3 minutes until vegetables are heated through.
7.Sprinkle with oregano before serving.
