Ingredients

3 cans condensed chicken broth
2 cups water
1/2 cup wild rice
1/2 cup chopped green onion
1/2 cup butter
3/4 cup flour
1/2 teaspoon salt
1/4 teaspoon poultry seasoning
1/8 teaspoon pepper
2 cups half-and-half
1 1/2 cups cooked chicken
8 slices cooked bacon
2 tablespoons dry sherry
1 tablespoon chopped pimiento ( optional )
water , if needed
This chicken wild rice soup is a recipe shared by the Pastor's wife, an all-time favorite comfort soup. The soup is a warm and hearty meal that can be enjoyed as a light lunch or a full meal with bread and sides. The combination of chicken, rice, and bacon provide a well-rounded flavor combination. Instructions

1.In a large pot, heat the chicken broth, water, uncooked wild rice and onion. Cover the pot and let it cook until the rice is al dente in texture. It may take around 45 minutes to 1 hour.
2.In a frying pan, melt the butter over low heat. Add the flour, salt, pepper and poultry seasoning and whisk together until you get a smooth mixture.
3.Pour the mixture into the pot and stir well. Cook for around 5 minutes.
4.Add the half-and-half, cooked chicken, bacon, sherry, and pimiento and stir together. If the soup is too thick, add some water.
5.Let the soup cook for an additional 10 minutes over medium heat, stirring occasionally.
