1 3/4 cups water
1 tablespoon chicken bouillon granule
2 cups uncooked instant brown rice
1/3 cup chopped onion
1/3 cup of chopped sweet red pepper
1/3 cup chopped yellow sweet pepper

6 -8 fresh mushrooms , sliced
1 stalk celery , sliced
2 -3 tablespoons vegetable oil
1/8 teaspoon dried tarragon

Instructions

1.In a saucepan, bring water and chicken bouillon granule to a boil. Stir in rice.
2.Reduce heat and simmer, covered, for 5 minutes.
3.Remove from heat and let stand until water is completely absorbed, about 5 minutes.
4.In a large skillet, sauté onion, sweet red pepper, yellow sweet pepper, sweet green pepper, mushrooms, and celery in oil until tender.
5.Stir in rice and tarragon and heat through.
