Ingredients

1 bag frozen broccoli
1/2 cup onion
1 can cream of celery soup ( I use Recipe # 425183 ) or ( 10 1/4 ounce ) can cream of chicken soup ( I use Cream of Anything Soup Mix )
1 cup milk
1/2 lb Velveeta cheese
3 cups cooked rice ( I use brown rice )
1/2 teaspoon pepper
This Velveeta Broccoli Rice Casserole is a classic comfort food that has been enjoyed by families for generations. Instructions

1.Preheat the oven to 350°F.
2.Cook rice according to the instructions on the package. Once cooked, set aside.
3.Boil water and blanch the frozen broccoli for 3-5 minutes. Once done, drain the water and set aside.
4.In a medium skillet, sauté onions until they are soft and translucent.
5.Heat cream of celery soup and milk over medium heat, stirring constantly.
6.Add Velveeta cheese and pepper and stir until the cheese melts.
7.In a 9x13 inch baking dish, layer half the cooked rice, followed by broccoli and onions. Pour half the cheese sauce on the top. Repeat the layering process.
8.Bake for 30-35 minutes or until the cheese sauce starts bubbling.
9.Take out of the oven and let it cool down for 5 minutes. Serve hot.
