Ingredients

1 lb lean ground beef
1 tablespoon olive oil
1/2 cup diced onion
4 garlic cloves , minced ( I add lots more ! )
3 teaspoons chili powder ( I add lots more ! )
1 teaspoon oregano
1 teaspoon garlic salt ( I use garli garni )
2 cans diced green chilies ( as hot as you want them ! )
1 can diced tomatoes ( can use Rotel ! )
3/4 cup beef broth
1 1/2 cups Minute Rice
2 teaspoons parsley ( optional )
6 ounces shredded cheddar cheese ( optional )
Susan's Favorite Beef Enchilada Rice is a delicious and filling Tex-Mex meal affectionately named after its creator. This dish is made with lean ground beef, aromatic garlic and onions, and Tex-Mex spices, then simmered with rice until it's perfectly cooked. Add in diced green chilies and shredded cheese for a tasty twist on this classic dish. This meal is perfect for dinner on a busy weeknight or for a cozy family dinner at home. Pair it with your favorite hot sauce, avocado, or sour cream to make it your own.

Instructions

1.In a large skillet, heat olive oil over medium heat. Add ground beef, onions, and garlic, and sauté until beef is browned and cooked through.
2.Add chili powder, oregano, garlic salt, green chilies, diced tomatoes, and beef broth. Bring to a boil.
3.Reduce heat to low, then add Minute Rice and parsley. Cover and simmer for 15-20 minutes until rice is cooked.
4.Remove from heat and sprinkle shredded cheddar cheese on top. Cover for an additional 5 minutes to allow cheese to melt.

PROS

This meal is a one-pan wonder, making clean-up a breeze.
It’s also filling, hearty, and full of delicious Tex-Mex flavor.

CONS

The use of Minute Rice may not be preferred by those who prefer traditional long-grain rice.
This meal is also not ideal for those who do not enjoy spicy food.
