Instructions

1.Heat vegetable oil in a medium saucepan over medium heat.
2.Add rice and stir for 2-3 minutes or until slightly browned.
3.Add onion and garlic and saute for 2-3 minutes or until softened.
4.In a blender, mix together the roasted tomato and chicken broth until smooth.
5.Pour tomato mixture into saucepan and stir in salt. Bring to a boil.
6.Reduce heat to low and cover saucepan with a tight-fitting lid.
7.Simmer for 20 minutes or until all the liquid is absorbed.
8.Remove from heat and let sit for an additional 5 minutes.
9.Fluff rice with a fork and add roasted corn, jalapenos, bell pepper, peas, cilantro, carrot, and cheese if desired.
